SPINACH MANICOTTI

1 package Seabrook Farms Creamed Spinach

8 pieces manicotti (large macaroni tubes)

1-1 1/2 cups chopped cooked chicken

1/2 cup fresh bread crumbs

2 tablespoons grated Parmesan cheese

2 egg yolks

2 tablespoons finely chopped parsley

1 can (10 1/2 oz.) marinara sauce

1 small garlic clove, minced

Salt & Pepper

 

Defrost Seabrook Creamed Spinach by boiling 6 minutes. Boil manicotti until just tender, about 4 minutes. Rinse with cold water, drain.

Combine Creamed Spinach, chicken, bread crumbs, grated parmesan, egg yolks and seasonings. Fill manicotti with mixture. Arrange side by side longitudinally in a buttered shallow baking dish.

Cover completely with sauce, sprinkle with additional parmesan cheese and bake in at moderate (350 F) temperature in oven until cheese browns and sauce is bubbling hot, about 25 minutes.

Serves 4 to 6.
