SPINACH SAUSAGE PANCAKES
1 package Seabrook Farms Creamed Spinach
1/2 pound sausage
1 cup pancake mix
1 cup milk
1 egg
Defrost Creamed Spinach by boiling 6 minutes. Cook sausage in a skillet, stirring and mashing constantly, until brown and crumbled. Pour off excess grease.
Pancakes: Beat milk and eggs, add pancake mix, stir well. Add sausage meat and spinach. Bake pancakes on a hot griddle greased with sausage grease.
Serves 3.
Very good with maple syrup drizzled over pancakes.
