MUSHROOMS FLORENTINE

4 Phillips Portabella Mushroom Caps

1 package Seabrook Farms Creamed Spinach

4 ounces grated sharp (yellow) cheddar cheese

Olive Oil

Old Bay Seasoning

Pimentos or roasted peppers (garnish)

 

Defrost Creamed Spinach by boiling 6 minutes.

Remove any stem pieces from mushroom caps, brush lightly with olive oil and sprinkle with Old Bay.

Broil mushrooms 6-8 inches from heat sources, cap side up for approximately 8-10 minutes or until browned. Turn over. Fill each cap with 1/4 of thawed spinach. Sprinkle with cheese.

Garnish with several strips of pimento or pepper. Broil until cheese is melted. 

Serve as main course or side dish.
